I am modeling a plant that has regularly occupied spaces classified as work spaces. These spaces have little to no windows which hurts overall sDA calculations, so I would like to consider keeping the roll-up doors opened during occupied hours. Would this be acceptable to still achieve daylighting credit, and what's the best way to model in RadianceIES?

Whether it is acceptable is probably a question for your reviewer, but I highly doubt it. Normally special conditions are not considered in performance modeling, because the conditions are not guaranteed to be met during operation. For example, deciduous trees are not allowed to be considered as a seasonal shading strategy.
Have you considered glazed or translucent panels in the roll up doors? This would be a totally acceptable strategy.
