A portion of our building envelope is historic. Can we exclude it from our model?

Yes. ASHRAE calls this "Service" hot water...see the end of App. G. LEED generally allows you to take credit for energy savings due to water reduction in the WE credit for the amount of water DHW reduction as well if you document it properly, but please check me on that.

If it could be considered as process load, should it be entered in table 1.4.4 in the Other Process Equipment table.
Thanks also for the advice of water reduction, but I'm not involved in WE credit.

Point 11 of Table G3.1 specifies how DHW shall be considered. If the system is part of the new project, see paragraph b. Regards

Domestic or service hot water is a regulated component of 90.1, see chapter 7. Since it is regulated (addressed by the standard), it is not a process load. So it gets entered in the Service Water Heating tables (Table 1.4.5 in the new section 1.4 tables or Table 1.4.4. in the old section 1.4 tables).
Projects can claim energy savings associated with reduced hot water demand from low flow fixtures.
