Are you working with a hospital or a MOB type project? Hospitals track waste and they should be able to give you this data. Most facilties have limited loading dock space and make up for the lack of space by increasing the number of haul offs in a week.
Personally I find that it is easier to deal with the size of the bins or carts they use to haul things around and provide that space in the soiled holding rooms. Then to document the credit we describe the process the facility has in place. All this assumes that you have a central loading dock that you aren't designing and trying to size at the moment.
