I recently posted this question in the Retail-CI forum. However, the credit in that forum is rather inactive, and I was hoping I could get some feedback here.
I'm working on a Retail project that is installing steam kettles for commercial food service. The equipment consists of two 6-gallon kettles mounted on a modular base. Steam is provided from the base to the kettles through piping. My question is whether this equipment should be included in process water use reduction calculations under the "food steamer" category. It seems as though the food steamer category is intended for box-shaped units with multiple racks, similar to an oven.

There is no standard for steam kettles. Totally different use, totally different piece of equipment. Steamers use pans. Food is put directly into a steam kettle, like stocks/soups/sauces.

Targets for Water Use Reduction, LEED Retail CI: ice makers, dishwashers, collectors, pulpers, combi's, steamers, clothes washers. Keep in mind that ice makers, combi's and dishwashers ALSO have an Energy Star component. The standards for E/S include a water standard, i.e. gal/100# ice; gal/rack, dishwasher; GPM, Collector or pulper, per pan, steamer/combi.
