We at climate zone 1, and in normal practices, we use solar water heating storage tank for shower. In ASHRAE 90.1 , table 7.8, which categories of equipment performance we need to follow?

There aren't any LEED interpretations on this issue (surprisingly) so I would assume an electric storage baseline until GBCI says otherwise.

Electric is always the base in the absence of a proposed system.

how about the "Unfired Storage Tank". will it be possible for such mechanism park under this category? because neither we using electrical or gas to generate heat, and what we need to ensure is the efficiency of the insulation to reduce heat lost.

Not sure I understand the question. Tank insulation need would be dictated by the delta T of the hot water and the area outside the tank.

No that just refers to the amount of insulation needed for a separate storage tank. If you have one or more of those in your solar system the insulation requirement would apply.
The solar does not fall under any particular category. Technically you will need to model identical electric water heaters in both models and then demonstrate your savings in the renewable energy section of the prerequisite form.
