How should we treat the VOC standards for an existing building where all new renovation work is compliant with VOC limits but there is no knowledge on any adhesives / sealants / paints that are retained in the original construction? Theoretically, do these materials go on emitting regardless of the age of the building or are they only emitting for a certain period after application?

Omer, on LEED-certified renovation, you don't need to be concerned with paints that are already existing in the building. LEED does not require this, and also most of the emissions from the products generally occur when they are being applied or shortly after, and then emissions levels drop off (but do continue) for the life of the installation.
