You'll want to show all rooms in the plan drawings, but could probably provide section drawings of one or more typical conditions.
Furniture and moveable non-permanent partitions are not typically shown.
The LEED Reference Guide also has some good explanations and samples for how to document this credit.

Just a cautionary note:
Under 2009 the reference guide states that systems furniture is included in the calculation of this credit - p, 567. And on a recent 2.2 project, the LEED reviewer is requiring furniture systems to be included as well. They point to the "definitions" which says that installed furniture is included in the section drawings. We have never used furniture in the NC calculations before. Anyone else with experience with this?
