In our project we have combisteamer, which is boilerless. In installation instruction provided by manufacturer there are 2 different values of water use. First is for Combisteaming (according to kitchen technologist this is standard mode and will be used during 95% time of exploitation) – 4l/h , second for steaming (according to kitchen technologist this mode will be used during 5% time of exploitation) – 18l/h. To achieve this credit maximum water use must not exceed 8l/h. Which value we should count in our calculation? Or can we take baseline from Retail–CI-v2009 WEc1: Water use reduction which is specify in link below: http://www.leeduser.com/credit/Retail%E2%80%93CI-v2009/WEc1#lang-tab ?
