We are needing some help w/ the finer details of metering and complying with the requirements of this credit but also trying to be rational about the extent we need to go for metering the end uses. For example, we have AHUs that we've planned to have separate 120v circuit that has service lights and a convenience receptacle on/in the unit. Since this includes both lighting and receptacle energy end uses would that need to be circuited separately and both metered to fall under the "interior lighting" and "receptacle" end use categories?

Are you accounting for them separately in your energy model?
I would say the answer to your question and the one above are both "no". The light and plug will likey use a very small amount of power, so small as to be completly insgnificant.
