Hi Helena, Here’s one more recommendation. My daughter, who grew up visiting green construction sites with me, has a Master’s degree in Sustainable Agriculture and certificates in Permaculture. She has managed ranches in western Colorado, which has a very similar climate and soil conditions to Utah. She has also managed farm to table operations in both Colorado and Montana. She currently works on sustainable agriculture for Montana State University, but does consulting elsewhere.
