Where can I find more information on how to procede with Low emitting materials in case that the projects keeps big part of the spaces inside unrenovated? I am assuming, there is no need to dig in history for the VOC documentation on used products, but I need the concrete rules concerning this.

Assuming the unrenovated portions of the project are within your LEED boundary and are over one year old, then they should qualify as salvaged or reused. v4 only mentions salvaged or reused products under composite wood and furniture, but you may want to consider the v4.1 version. Under the v4.1 version of this credit, you can claim salvaged or reused products for flooring, wall panels, ceilings, furniture and composite wood. Any liquid applied products that were installed over a year ago, I would think just would be excluded. Search the reference guide for "salvaged" within this credit for more info.
