I am doing a project where sustainable food product is 56% (LEED Criteria 25%) which are from the extracted, manufactured within 100 miles. how much percentage of documentation is required.

Check out "Step 5. Set Up a Tracking System" in the Reference Guide. The last two bullets state how much supporting documentation you need to provide for different types of purchases.
